Xanthan gum is produced through fermentation of Xanthomonas campestris bacteria. Key steps include:

  • Strain Selection: High-quality X. campestris strains are selected through domestication and purification.
  • Culture: The selected strains are cultured in two stages - primary and secondary culture - under controlled temperature, oxygen, nutrients to multiply.
  • Fermentation: The cultured strains are inoculated into fermentation tanks. Under optimal conditions, they are fermented for 70 hours to produce xanthan gum.
  • Extraction: The fermented broth undergoes pretreatment. Ethanol/isopropanol is added to precipitate out crude xanthan gum fibers.
  • Purification: The crude gum undergoes two-stage extraction and dewatering to purify it.
  • Processing: The purified gum is pressed, dried into fibrous form then ground into powder of different mesh sizes.
  • Quality Control: The powder is tested and classified according to specifications.
  • Packaging and Shipment: The compliant powder is packaged and released to customers according to their requirements.
