Maltitol is a white crystalline powder or colorless transparent neutral viscous liquid, with a strawberry aroma and sweetness ranging from 75%-95% that of sucrose. Maltitol powder is readily soluble in water, ethanol, glycerin, propylene glycol and demonstrates high hygroscopicity. In addition, Maltitol possesses excellent heat stability, showing no changes when heated at 1.0°C for 1 hour at pH 3-7. Maltitol can be stored without changes for long periods of time even when present in the presence of proteins or amino acids.
Maltitol Powder Specifications
Maltitol is a popular sugar-free sweetener with numerous applications in food manufacturing. Maltitol is an ideal sweetener for many applications, with 99% purity in both powder and liquid form. Maltitol specification requires a purity level of 99%. To meet different demands, Maltitol package can be customized to 25kg/bag (for crystal Maltitol) or 800-1000 kg/super sack; 60kg/barrel (for liquid Maltitol) or 200L/barrel.
Maltitol is a sweetener derived from maltose and is produced using a high-pressure hydrogenation process. A combination of maltose and nickel catalyst is hydrolyzed in an environment of 4-12 MPa and 100-150℃, before being passed through active carbon to remove any impurities, followed by a cationic resin exchange to eliminate the presence of nickel ions. Maltitol syrup is then concentrated to 80% before being cooled over the course of three days to around 20℃ which causes crystallization. The resulting Maltitol crystals are washed with a small amount water, providing Maltitol that has purity levels up to 99%.
